Every year when my father is done his sugaring, he lets me have the very last partially boiled sap so I can cook it down more. It can be quite dark in color, but the taste is ok. It makes nice maple syrup for baked beans.

First I cook it in pots on the stove on the back porch.

It can get quite steamy and hot.

Then I strain the syrup through cloth. Yes, those are diapers, but they have never been on a baby's bottom. That dark stuff is sugar sand.

The finished product! This isn't even half of it. The whole process takes some time, but it is worth it.
